Menu Plan Monday 3/26/18


The menu for last week worked out pretty well considering we didn't have all of the ingredients to easily whip up dishes.  This week will follow the same easy pattern I have established here, and here.  It is officially Spring even though here in the deep south we have had nighttime lows in the 30's 😕.  For the most part though, the weather has been quite enjoyable, cool at night and in the 70's during the day.  On another note,  I am really off of my picture game, but I am hoping to get some great photos of our meals this week as the days get longer and longer and the light is better. 
Our star recipe of the week went to Korean Beef/Chicken Bowl.  I make this recipe often because it it so simple and delicious, especially if you cook your protein and freeze in one pound packs.  Just remember to put the package in the frig the night before and by the time you are ready to cook the meat is defrosted and perfect to mix in the remaining ingredients.  This meal can literally be on the table in as little as 15 minutes with a super small amount of prep.  Look for the frozen "sticky rice" from Aldi and completely simplify your weeknight meal.  I'm sure this is a seasonal thing so be sure to stock up!  Serve with a roasted vegetable and voila, dinner is done.

Some sort of green to keep us going--asparagus maybe?

Leftover Green Veg
Vegetarian Sausage
