Chicken and Dumplings Recipe



My chicken and dumplings are famous!! Only in my neighborhood or better said with my best friend neighbor lol.  But really, this is a great recipe and super simple using some homemade and some ready made ingredients.  Just call me Sandra Lee ;o)


CHICKEN AND DUMPLINGS
1 whole chicken boiled, cooled, and removed from the bone
broth from chicken cooled with excess fat removed 
1 4pk Pillsbury old fashioned biscuits
6 eggs boiled, peeled, and grated
salt to taste around 2 tsp
pepper (I use a LOT ) about a scant tablespoon for the whole pot but...

cayenne pepper to taste


You should end up with about 9-10 cups of broth.  I always strain mine so that there are no surprises (bones and such) in the finished dish.  I also try to make stock/broth whenever we have chicken so you can use frozen if you would like. My broth is always flavored with seasoned salt, pepper, and garlic powder or granulated garlic.  Bring broth to a rolling boil, tear biscuits into dime to quarter sized pieces and drop into pot, stirring occasionally to keep dumplings separate.  Use all four cans for this amount of broth or adjust according to amount of broth used.  We prefer ours with lots of dumplings.  This process takes about 5-10 minutes to complete.  Add chopped chicken back to the pot, stirring to combine and turn heat to low.  Add salt to taste and allow this to cook about 10 minutes or until dumplings are almost done.
WARNING, when tasting dumplings to check doneness...watch your mouth, because you could burn your face off! lol
Add grated eggs and adjust pepper to your taste. (As far as we're concerned, the more the better) Stir until mixed, and allow to cook about 5 more minutes or until dumplings are done and mixture is thick.  Check seasonings.
