Oh it took me so long to find a chicken soup that I was going to make for this Crazy Cooking Challenge on chicken noodle soup. I was trying to find a soup that would be to all of our liking here at testosterone heaven. I know that the boys around here will mostly eat anything, but I'm a little picky about soup. As Rachael Ray would say I prefer "stoup", and chicken noodle doesn't typically qualify as that. I also was looking for a recipe that I could use items from my freezer and pantry.
I feel so lucky to have found Cooking Dunkin Style while perusing Pinterest the other day.
This recipe had all of the qualities that I was looking for and I didn't have to go to the store. I left the spinach out since I didn't have it and it was still scrumptious.

CHICKEN VEGETABLE SOUP WITH ORZO
2 carrots diced
2 stalks celery diced
1 onion diced
Sautee veggies in 2 tablespoons butter until soft.
Add 6 cups of chicken stock (I used homemade)
Salt to taste
Bring to a boil and allow to simmer for approximately
30 minutes. Add 1/2 box of orzo, and 2 cups of cooked, chopped chicken. Allow the pasta to cook until plump and tender. Serve with crusty bread and a salad if desired.
Enjoy......it's a good one ;o)
