Menu Plan Monday 9/10/12

We had a GREAT weekend, going to Marco Island and attending a Hardware Convention with my family.  No cooking, cleaning, or even deciding what to do past getting up going to breakfast (already prepared) then laying very still on a beautiful, and I mean beautiful beach.  I was really hoping that the lottery ticket we purchased would make it possible to chuck it all for another week and pretend that resort living was my real life. But alas, I'm home doing laundry, and all the other stuff running a household entails.  Oh well, it was fantastic while it lasted :D  Now needless to say, everything we ate was delicious, but not necessarily healthy, so this week's meals is about getting back to basics and attempting to right the wrongs we have done over the weekend.  (I have to say we would do it all over again if given the chance!)    Although the recipes may not be exactly the lowest in fat and calories, I say that anything made at home is about 90% better than restaurant food.  This will start our road to food recovery!

Leftover Baguette Toasted
To Do:  Prepare Crockpot

WEDNESDAY
Green Veggies
To Do:  Put pork chops in frig

THURSDAY
Grilled Pork Chops
Parmesan Couscous
Lima Beans
To Do:  Make lasagna

FRIDAY
Make-Ahead Cheeseburger Lasagna
(making lightened version, less cheese, reduced fat cottage cheese)
Steamed Broccoli
