Menu Plan Monday 10/1/12

I did it, I did it, I did it.  I resisted the lurid easy call of restaurant food.  I feel better, my eyes and ankles aren't swollen and I know I consumed at least half of the fat calories I would have eaten otherwise.  The kids didn't complain, not once, and they actually brought friends over to share the meals we had.  Oh yeah, ultimate compliment :)  Anyway my goal is to keep it up through the next week, using this weekend to prep everything which worked out fantastically!

Here's to hoping your week is full of cooler temps and snow cone ice (my current obsession)

SUNDAY
Green Salad
To Do:  Chop veggies for week, bake some bread, make split pea soup, straighten the house for a showing, shop and prepare gifts for work and my seester's birthday

MONDAY
Sandwiches
Split Pea Soup
To Do:  Put meatloaf in refrigerator for defrost.

TUESDAY
Meatloaf
(Family Favorite)
Mashed Potatoes
Peas
To Do:  Put chicken cutlets in refrigerator for defrost.

WEDNESDAY
Southwest Pasta Skillet recipe
Garlic Toast
To Do:  Put pork chops in refrigerator for defrost.

THURSDAY
FRENCH'S® CRUNCHY ONION PORK CHOPS
Couscous
Green Beans
To Do:  Nothing, tomorrow's Friday :)

FRIDAY
Freezer Food Friday
(Basically, anything you can find!)

DESSERT OF THE WEEK
Apple Bread Pudding
I'll post a review later this week.

This is the plan for this week.  Although it doesn't appear that these items are particularly low fat or even high on the so called healthy scale.....I control the ingredients.  This makes all the difference in the world when my eye puffiness is involved.  Have a great week and.......
