Menu Plan Monday 2/15/16

I decided that this week regardless of how much I would rather order my box from my meal service...I am cooking from my freezer and pantry.  I'm also going to make some freezer meals for my sons and niece in order to use a portion of the overage I have.  I haven't decided exactly what kind of "freezer" meals...yep, I'm still in the planning stages on that. The downside for me {or my booty} is that things will probably get a little cheesy since my propensity always leans toward cheese and more cheese :)

MONDAY
Baked Teriyaki Chicken
Roasted Broccoli

TUESDAY
{I'm hoping the fiber from the lentils cancels out the cheese}
Roasted Green Beans

WEDNESDAY
Creamy Chicken Pasta with Bacon | Good Cheap Eats
Creamy Chicken Pasta with Bacon and Peas
I might use this White Sauce  and I'm definitely using leftover chicken

THURSDAY
Leftovers

FRIDAY
?

Since I'm only making three real meals, the likelihood that I'll even put a dent in what I have is negligible.  I typically decrease the ratios on everything I make so that I only have leftovers for one day with a lunch thrown in here or there.  With that being said, my food choices and reviews will be a tad bit creative over the next couple of weeks.  I know I'm gonna have to work exceptionally hard to stay out of the grocery store because I always "need" a few things.  Lunch is the worst for me because I like what I like, and the way I look at it...at least I pack my lunch every day {truly, my coworkers are always amazed} when I work.  As much as I enjoy a restaurant dinner, I prefer to stay on a healthy track for lunches during the week.  I just feel better when I choose my meals for midday and therein lies my conundrum.  I know I'm going to run out of acceptable {to me} lunch things and I have a serious buying weakness at the grocery store.  I wonder if I can convince my sis to go for me?  Probably not.  I've got it!....I'll have to find obscure recipes that use up my copious ingredients and give them away quickly.  That way I can head to the store without guilt.

Have a great week
