I've followed this basic recipe for quiche for about the last year, and I improvise with whatever ingredients I happen to have on hand. This time I used leftover cooked bacon, Gruyere cheese, and fresh spinach leaves {all found in my frig 'cause I'm doing an impromptu pantry challenge}. Served with a spinach salad on the side made a quick, delicious weeknight meal. {and lunch for the next day}

I also found a new item {new to me} at The Fresh Market on my last shopping trip. Spreading this deliciousness on to a buttery cracker is sublime. I'm in love!
