Menu Plan Monday 8/31/15



This past weekend was a true get your booty in gear and get things done kind of one.  Not only did I work three different jobs over the two days but I also kicked butt and took names as far as house work.  I have seriously been slacking in all of my "home fire" duties so a work day was in order.  I was able to to grocery shop, make individual servings of yogurt and almonds for lunches, chop peaches and make Granny's Cobbler, make banana pudding, slice veggies for the week, cook fresh okra, make a spinach and havarti quiche, do all of my laundry and put it away.  I was done by 4pm and then went for social hour and a great dinner with my friend family. Whew.....I also did the dishes which seems to be the bane of my existence and the biggest reason I've been slacking in the cooking department {along with cooking vegetarian for the boy who doesn't like vegetables}.

This week's menu plan is not carefully planned and/or written in stone but loosely based on what is in my cabinet for this week.  Everything is quick and easy!



MONDAY-Spinach and Havarti Quiche {I have ingredients on hand for this and veg boy is coming home a day earlier}, Pan Sauteed Okra.

TUESDAY-Grilled Chicken, Squash, Crock Pot Baked Potatoes, Grilled Green Beans.

WEDNESDAY-Grilled Hamburgers, Portobella Mushroom Burgers, Pasta Salad, Lettuce and Sliced Tomatoes.

THURSDAY-Parmesan Chicken Pasta, Steamed or Roasted Broccoli

  1. I really need to plan on a work day at home now that the kiddos are back in school. It's amazing how disorganized everything gets when they are on summer break.     1. I sometimes dig my heels in and avoid doing the work like the plague but when I do, my week goes so much smoother and I definitely eat better. Have a great week too!

  2. It's nearly impossible to cook in a kitchen full of dirty dishes, isn't it? I hate doing dishes, too, if you couldn't tell! Quick and easy is my favorite kind of food these days!

  3. After reading this post, it has inspired me to get my butt off the couch and start finishing my "home fire" duties. This post has helped me realize that I should persist if I want to happy in life.
