Menu Plan Monday 8/10/15





I always check out other food bloggers menu plans and most of the time save recipes that look interesting to me to make at a later date.  Sometimes I get around to them...sometimes I don't, and mainly because I forget where I have filed them.  I truly need a source to index all of these recipes but I haven't taken the time to research the right way for me.  Any suggestions anyone?  I would really like to be able to categorize my "to make" recipes and be able to view them easily in one place with a simple format.  Yep, that would be great, I am so open for suggestions.

I'm still focusing on no processed sweets {even though my birthday last week kinda messed me up for a day or so} eating low fat plain greek yogurt with no added sugar fruit topping {homemade}.  My favorite topping combination right now is mango flavored with lime zest and juice.  I cook the mixture on the stove over medium heat until it reduces and becomes thick.  These mango required no added sugar...yes, they were that sweet....but with other fruits I typically add a couple of tablespoons of sugar before cooking.  Simply layer 1/2 cup yogurt in a resealable container with desired amount of fruit topping.  My sweet spot is usually about 1 1/2 tablespoons.  Then add any other desired toppings...a sprinkle of almonds, and a small drizzle of honey completed my mango treat.  The blueberry ones pictured below had no fruit topping {just the fresh berries} sliced almonds, honey, {more than a drizzle since there wasn't any sweetness added}and chocolate chips.  The best part is that I make them all on Sunday for the week, assembly line style.  It keeps me eating minimally processed foods and lessens the likelihood that I'll pay more than $1 for one of these individual serving, btw what a rip off...but boy are they convenient!  These are my absolute favorite for a reusable option for individual servings and lunch packing.  The metal lids and bands are included but to make these a comparable replacement for tupperware, I recommend buying the plastic lids.  Everything is dishwasher safe which is even better.  They don't nest in one another but I am a freak about storing all of my storage containers with the lids on so that's not a problem for me.  I devote an entire cabinet so that I will never have to look for a lid again in my life. #biggestpetpeeveever

Did I cook anything of notable interest last week?  No, not really, but we ate simply when we were at home.  An oven baked sandwich and salad is the only thing I can think of that I made.  
My birthday week did find us eating out more than usual but I'm thinking I only go around once so i wanna do it right!  Oh well, fun time is over, back to the grind this week.

Lunches will be from home and dinners will be pre-planned.
