OMG May is over and Christmas is almost here...Menu Plan Monday 6/1/2015

So I just started to write this post and I realized that Christmas is already around the corner and I had a bit of an anxiety attack you know with my financial restriction and all and yes, I know I'm babbling ;o)  Well...whatever, things always work out and seriously nothin' changes if you stress about it.  I just need to win the PCH sweepstakes and I'll be fine.

On to the happenings of this last week.  We celebrated Tanner's Birthday last week with two of his favorite things.
1.  Peanutty Chicken Pasta
2.   Chocolate Trifle
 Look at these bowls of "stuff", not a real ingredient in the mix except for the whole milk.  
But....this is my Boy #1's favorite and it's his Birthday month.

He's blowing out his candles.  As I stated before it's his Birthday month and he didn't want to get off the couch so I did what any Mom would do and spoiled him just a little.

Besides that I didn't do an extraordinary amount of recipe cooking or following.  We did not eat out though and I didn't shop except for necessities. {Had to buy the stuff to make the junk food!}  I made the best ever queso and a taco ring for the Memorial Day celebration and I didn't have any leftovers which made me ecstatic since then I didn't have any junk food hanging around my kitchen. All in all a great weekend and Birthday week for Tan. {We celebrate at least the whole week sometimes the whole month lol}

My Ty, left last Thursday for his summer camp counselor job and graduates from high school this Friday.  He'll be back around the house this Thursday for his practice and senior last minute things. He's been dual enrolled at our local college and finished all of his required high school courses in December so he's felt "graduated" for about the last five months. So back to work he goes Saturday morning after the ceremony with not so much as a whisper of streamer or confetti throwing. Kinda sad {sniff, sniff} although he says when he graduates from college that we will have a throw down celebration of his successes.

I'll be cooking for two this week until Thursday rolls around when I'll ramp it up with lots of Boy #2's favorite fresh vegetables.  {I think I've told ya that I'm indebted to bring him food weekly while he's away}


SUNDAY 
Chicken Cordon Bleu Pasta Bake
Rice Pilaf
Peas
To Do:  Make lunches, wrap potatoes for crockpot, cook bacon, slice green onions, take ground meat out of freezer, make turkey burgers for freezer.

MONDAY

To Do:  but chicken in the frig, make lunches

TUESDAY
Chili Lime Chicken Tenders Recipe - only 4 simple ingredients! Chicken, sweet chili sauce, lime juice and honey. Tons of great flavors! We ate this two days in a row - can't get enough of this simple grilled chicken recipe!

Potato Hash with Leftover Baked Potatoes
Leftover Spinach Salad
To Do:  Nothing off tomorrow

THURSDAY

Creamy Horseradish Pork
Sauteed Squash and Zucchini

Roasted Garlic Couscous
To Do:  Nothing, tomorrow is graduation!!

FRIDAY

GRADUATION DAY
We'll probably have an impromptu after grad dinner somewhere.

This is the week that I no longer have a child in "school" {elementary, middle, or high school}, although I do have two in college now.  Time just races past when you are in the trenches doing all of the homework, projects, and even planning for after school careers and college choices.  I am a little nostalgic and wish that I could have been more "live in the moment" for both of my kids.  My organizing soul was always thinking ahead to the next task, but if I can offer a little advice....be happy where you are at {the kids want your full attention, so enjoy the back yard on a sunny day and eat cereal for dinner}....don't worry about getting everything done....{especially if you have boys 'cause they'll just mess it up again}...spend time as a family and establish bonds that will never break {get out of the house, go somewhere you love, have fun at Disney World, the beach, the park, etc  It doesn't have to be expensive, just go!}....and most importantly....enjoy {truly get to know each person you have created, accept, and love them} the children which God has blessed you with.
