Sunday Dinner

Chicken Enchiladas
A yummy rendition...with no true recipe.  I used up all of the bits and pieces in my frig to create this dish.  Salsa Verde, Rotel brand tomatoes, cheddar and monterey jack cheese, cream cheese with spices and chopped green onions all went in the mix.  We would have had a salad with this but Boy #2 forgot the lettuce so we just ate this.   I'm not complaining though, cause he went to the store for me. Tonight, that was perfect but I'll add some extra veggies to the mix tomorrow.  

I also made the taquitos for the freezer and individual ham and cheese strombolis for the freezer.  I like knowing that I have a few quick single serving things in the freezer which means not many dishes for the weeknights.
