I made these in 20 minutes. Yield 8 frozen breakfast sammies and one for Boy #2 for breakfast. Simple and easy.

Chantilly Cake Review

Publix had this cake on sale the last two weeks. It looked quite scrumptious so I purchased it for a girl at work who's husband "forgot" about her birthday. Of course us girls have to stick together so I bought her this cake for an after celebration of her special day. I like to bake, but after work on a weeknight it's not good to tempt fate especially when one didn't sleep near enough hours the night before. So I stopped by my friendly Publix and bought the prettiest one I saw. The icing is a mix between butter cream and whipped topping and isn't anywhere near as sweet as the usual icing of a Publix cake {a good thing}. The fruit in the middle layer and on the top was quite fresh and very tasty. Sadly, you now have to special order the cake 24 hours in advance. Corporate impulse control for me :)

Menu Plan Monday 4/16/18

If you like a sweet tart orange that has no seeds and is a cinch to peel, try the Minneola variety. They are my absolute favorite and I buy them every year when they are in season. The season has pretty much passed now and I feel like I am in a holding pattern as far as fruit and vegetables are concerned and I need a new fruit to eat for breakfast. It has still been too cool here to see an abundance of choices at the Farmer's Market so I have been eating plain scrambled eggs. I don't particularly like breakfast foods in the morning and I usually stick with some sort of fruit for a mid morning snack followed by an early lunch. Fingers crossed the spring bounty hits the market soon! I forgot to finish my meal plan post last week and what we ate...well, it wasn't terribly appetizing. The only exception was the ham I baked on my day off. I'm in crunch time now to finish up the last class in this semester and cooking isn't on the top of my priority list.

Menu Plan Monday 4/23/18

This cake I purchased from Aldi is still number one on my list of non homemade sweets. Lucky for me the time of year rolled around and my store had plenty of stock. Actually, this cake is not overly sweet which might just be the reason that I am in love with all of its cakey goodness. The whipped cream layer is not fake, the cherry layer has whole fruit that is more tart than sweet, the cake is a perfect moist sponge, and the chocolate coating...well its chocolate. In my mind, this delightful combination is the perfect dessert that isn't either too rich nor too sweet. We ate well last week, combining some old favorites with one standout recipe that will repeat for sure be on our menu many times in the future. The haluski (I halved the recipe) that we ate with the Juicy Lucy Burgers was my favorite meal! Obviously, this photo isn't from the meal we ate, but I did use the same type of cheese.
