Menu Plan Monday 1/27/14 (I'm starting on Sunday)

Man, I love menu planning!  No, really, I had forgotten how nice it is to not have to scramble and think of what I'm going to make for dinner.  I like knowing that I have several (at least) options for a quick meal in the frig.  I love knowing that I have a healthy dessert like yogurt, vita muffins (gotten almost free) etc. waiting for me in the freezer when my 8 pm sweet attack happens. I know, I'm a dork...and my kids agree :)
A new sport season is starting for Boy #2 and it is his VERY favorite and the one that he  excels in.....TENNIS.  For the foreseeable future, all of my conversations with him will be involving strategy, seeding, transportation, coaching, playing, and practicing tennis.  He will be all consumed...that's how he rolls.  Tying in the two subjects, I will have to be extra careful to serve well balanced electrolyte rich meals and remind him to eat and drink.  With the extra practice comes cramping and more. You would think he would see the correlation by now......In the meantime, it means the boy still needs his Mom....aaaah.
Have a blessed week.

    1. Thanks Jill....and pizza is always fun! Hope you enjoy the Wonton Chicken Cups...feel free to improvise with the seasonings. I'm a throw in the bowl kind of cook and add whatever tastes best to me on that particular day.
