Yet again this week, no significant progress on the healing of my finger :(
However, I did cook 4 out of 5 weekdays! Basically, my goal is to keep preparation to a minimum, reducing the time my finger is involved in chopping, washing, and wiping.
The final menu for last week included Italian Beef (in the crock), Pork Schnitzel, Macaroni and Cheese, and Homemade Pizza. Not super exciting but definitely easy. I used pantry and freezer items for dinner, only buying fruit and lunch items at the store last week, which made the menu cheap too! My plan this week is to continue with easy meals, but increase the variety to keep it interesting.
Since we're all about tennis right now.....
