Menu Plan Monday 9/3/12

I stuck to my menu plan last week and it sure was nice to have food ready even before we left for swimming practice.  Boy #2 is burning up the calories with the extra exercise and always hungry.  However, he is convinced that he needs to conform to a banana and coconut water diet to alleviate muscle cramps.  I think , though, he will eat just about anything I put in front of him.  I'm going to include some potassium rich foods this week and hopefully that will help to keep him in tip top shape.  Boy #1 is still following a healthy eating plan so I'm going to keep lots of fruit and veggies available for him also.  I'm making double amounts for the first few days of the week for a planned leftover day.  I'm not sure why I haven't thought of that before!
It's still hot as fire here in Florida and Labor Day for us means that we know the temperature gauge won't be dropping any for at least another month.  Hope your holiday is blessed and filled with love.
