Citrus Marinated Pork Chops



Boy #2 has been bugging me for weeks to make a version of Citrus Marinated Pork Chops that apparently he saw on a television.  Since I wasn't watching when he was, the recipe didn't seem all that appealing to me.  However, since he was hungry and I was still doing computer work, I kind of convinced him to get things ready for dinner.  As a result, his marinating idea won and I'm really glad that it did.  The end product was tender and flavorful and looked picture perfect.  Try this one the next time you're grilling.

CITRUS MARINATED PORK CHOPS
4 bone in center cut pork chops
1/2 large lemon, both the zest and juice
1/2 lime, both the zest and juice
garlic powder
season salt
pepper
olive oil

In a small bowl, place the zest and juice of the lemon and lime.  Add seasonings to taste and using a whisk, add the olive oil (approx 1/4 cup) .  Taste the vinegarette and add more seasonings as needed.  Place the chops in a shallow baking dish, add salt, pepper, and garlic powder as a dry rub to the chops.  Pour the liquid mixture over them, flipping the chops so that all sides are covered.  Allow the chops to marinate at room temperature for about 45 minutes.  Grill over medium heat until pork is done.
