Menu Plan Monday 7/9/12


The picture above looks like my pool, well....kind of....minus the bushes, and the mountains, and the steel ladder....okay, you'll have to use your imagination.  My pool is this size and shape and lately just as clear.  You see, sometimes one has to learn the hard way and admit when it's time to pay a professional.  You know, revel in your strengths and talents.

As a result, we have become pool people :o)
We can swim anytime we want in a clean appropriately "chemicalized" pool!
So, even though we really just want to sit around floating and frolicking, alas we still have to cook.  We're trying again this week to use up some of the stockpile  we have accumulated and with all the stuff that we have, we will be eating well.

Mexican Chicken Salad
Corn Muffins
To Do:  Prepare crock pot, make lunch, lay in the pool :), iron clothes, finish laundry

MONDAY
Slow Cooker Macaroni and Cheese I Recipe
I'm adding ham from the freezer
Leftover Salad
To Do:  Put roast in frig for defrost.

TUESDAY
Slow Cooker Roast Beef Recipe
Potatoes
Carrots
To Do:  Mix up falafel

WEDNESDAY
Chips 
To Do:  Everything to be done tomorrow

THURSDAY
Parmesan Crusted Tilapia This Italian inspired dish features fresh tilapia baked with a delicious coating of fresh Parmesan cheese, butter and Parmesan crème.
Parmesan Crusted Tilapia
Rice
Steamed Broccoli
To Do:  Using a Groupon tomorrow!

    1. Sure! Romaine lettuce, carrots, green onions, yellow pepper, tortilla chips, roasted corn kernels, tomatoes, and sharp cheddar cheese grated. This time I used a rotisserie chicken pulled from the bone and chopped with fajita seasoning added. (I used a little chicken stock to help spread the seasoning) I usually use my homemade taco salad dressing but this time I used a bottled Spicy Ranch Dressing. Hope you like it :)
