Menu Plan Monday 1/16/2012

We have been so lucky to have some "winter" weather the last few days.  Now that term is relative since we live in Florida.....highs in the low 60's, and 30's at night is definitely "winter" in a Floridian's vocabulary.  My only issue with the cold weather is I have to provide some tender lovin' care to my little baby lemon tree.  About two years ago we had several days where the temperature didn't reach 50 during the day and we were well below freezing at night.  Even though I attempted to cover and keep my mature lemon tree warm (with a standing lamp), it just didn't make it.  So.......I'm trying again.  Hopefully since the tree is so small, I'll be able to cover it completely and keep it from freezing. {fingers crossed}.
Anyway, we didn't adhere strictly to the menu plan last week, but we did eat at home.  I was able to have some flexibility with our dinners since my schedule has become significantly more stable.
What a blessing!
