We did really good on our menu plan last week and only veered from the plan
on Thursday and Friday. We had rotisserie chicken on Thursday and our Friday meal was a concoction made by Boy #2 using ingredients in the house.
I didn't eat any, but I understand from everyone else, that
it was a yummy one!
Our highlight this week was the Pumpkin Enchiladas. I froze some
of the leftovers and ate them for dinner on my late night at work.
I think they were even better the second time around!
Here's to happy cooking and a blessed week.
Thanks for stopping by today!
