Menu Plan Monday 2/28/11

We did good last week on our menu plan, and I am starting to feel the results of eating at home.  I feel better, my pants are looser, etc., etc.  It just so much healthier (and economical) for us, even when we eat "extras", the nutritional content is still much better!  I have to say the highlight for the week was the Juicy Lucy burgers.  Using the same amount of meat per burger as I normally would, I made two patties with Monterey Jack cheese in the middle and sealed them together.  The secret to keeping the cheese in, is to freeze the patties.  Just put them on the grill frozen, and allow the meat to rest about 5-10 minutes after cooking.  The cheese remains gooey (but not an inferno to your mouth) and inside the two patties.

SATURDAY
Chicken Stir Fry
Edamame
Brown Rice
To Do:  Put ham in the frig, slice peppers and onions, make ice cream dessert.

SUNDAY
Chicken Fajitas 
Corn
Spanish Rice
Fried Ice Cream Dessert
(Look for the post later this week, it is fantastic!)
To Do: Cut chicken up, make flour mixture, bake ham and package for sandwiches and later meals, make lasagna, make pasta salad.

MONDAY
or
(carried over from last week)
Pasta Salad
Peas
To Do:  Pack lunch for tomorrow, take lasagna out of freezer.

TUESDAY
Garlic Bread
To Do:  Pack lunch, cook bacon, chop red onion, make balsamic glaze, toast pecans, put steak in  frig.

WEDNESDAY
Crescent Rolls or Biscuits
To Do:  Prepare pizza dough, place in frig for slow rise, put hamburger in frig, chop leftover lettuce for pizza, chop extra tomatoes for pizza topping.

THURSDAY
Home Made Taco Pizza 
To Do:  Prepare peppers, pack lunches, put chicken stock in frig.

FRIDAY
Whatever the boys want to make to go with...I'm sure I'm working late.

I'm hoping that "The Boys" won't notice the two vegetarian meals this week. Even though the flavors are definitely things that they like, I may still hear some complaints.

  1. can't wait for reviews! I think the Juicy Lucy burgers sound great, I wonder if hubby would like them.

    I'm so happy to see your recipe for fajita seasoning! I can't find hubbys favorite anywhere in the stores anywhere and I hadn't found a homemade one we liked. I'll be giving this one a try.

    Thanks for looking today. This recipe was new to me and the only thing I'm going to add is some more salt, besides that it was pretty good.
