Oriental Salad with Chicken

Since I was a non participant in dinner night before last, our menu has been altered.  The chicken that I took out on Monday for Tuesday's meal was switched to Wednesday and changed up even more since my kids requested a family favorite.  They love this salad and would probably eat it every day for a week without any complaints.  We just added the roasted chicken on the top of the salad and Voila, dinner was served.
The following is a recipe that I published previously.  I actually forgot how much oil was called for in the dressing and only added 1/2 cup.  The result was really good and less calories!  
I'm glad we changed it up....it was better than what we had planned.

Oriental Salad 
Dressing Ingredients:

2 tbs sugar
2 tbs soy sauce
3/4 cup vegetable oil
1/4 cup red wine vinegar

Mix all ingredients in a cruet or whisk till sugar dissolved.  I prefer the cruet since the dressing does separate and it can be shaken easily with less mess.

Topping Ingredients:

1/4 cup sliced almonds
2 tbs sesame seeds
2 tbs melted butter
1 tbs sugar

Mix above ingredients then spread on a cookie sheet, bake at 350 until lightly brown.  Can also brown in a frying pan on top of the stove.  Watch closely, from experience they burn quite quickly.  Allow to cool then store in an airtight container till just prior to tossing salad.

Salad Base Ingredients:

Romaine Lettuce, I usually buy the organic kind that comes with 3 smallish heads and use 2 of them for the recipe.
1 can (approx. 8 oz) Mandarin oranges, drained
Red onion sliced thinly (desired amount)
1 pkg Ramen noodles crushed

Assembly:
Layer the lettuce in a serving bowl, add oranges, onions, Ramen noodles, and nut topping.  I usually toss these ingredients and serve the dressing on the side.  Enjoy!
