I am so happy that we actually spent all of last week eating at home....now the goal is to add some green, fresh, veggies and eat at home.
Since I have had the entire weekend off, I have been able to do some heavy duty planning and chopping (of the said green veggies).
No excuses now!

To Do: Take sauce for baked spaghetti out of freezer.
TUESDAY
Green Salad
Garlic Bread
To Do: Take steak out of frig.
WEDNESDAY
Grilled Steak
Baked Potatoes
Sauteed Okra
To Do: Take chicken out of freezer, make broccoli salad and appetizer recipe for work party.
THURSDAY
Crumb Coated Chicken Breasts
Noodles, Rice, or some Carb??
Green Beans
To Do: Remind everyone that I am delegating Friday Dinner to them!

Fresh vegetables seem to be easy to "forget" with dinner at our house, too - the meal will be almost on the table, and - oops, forgot the squash, or the salad, or whatever.

I find that if I prep them (clean, slice, chop, whatever) as soon as I buy them, it's a lot easier during the week to include them with meals. :)
