Although, it may seem strange, my boys love, love, love this broccoli salad. It must be pretty good because I've been requested to make it for two gatherings over this holiday season. It's a really versatile salad, so you can leave out or add any of the ingredients with the same delicious results.
BROCCOLI SALAD
1 head of broccoli chopped into small pieces (I use the flowerettes with no stems)
1/4 cup purple onion
1/3 cup shredded sharp cheddar cheese
2-4 tbs craisins
2-4 tbs golden raisins
1/4 cup sliced or slivered almonds
4 slices bacon fried crisp and crumbled
1 cup mayonnaise
1/4 cup white sugar
1 tbs white vinegar
Mix mayo, sugar, and vinegar until smooth. Add remaining ingredients and mix well. Chill for 1 hour. Stir prior to serving. If making the day ahead keep the bacon and cheese separate and add just before the final stir.
