Last week's menu was good and easy and as far as I'm concerned, a sparkling success. The highlight was the chocolate cake with peanut butter mousse icing, although the manicotti was a close second. I only ate a small piece of the cake, but I'll definitely be making it again. Only one small change in the plan which happened on Friday. I was lucky enough to bring home the leftovers from a catered meal at work thereby eliminating any need to cook at all.....yay for me! So the crockpot enchiladas will carry forward. Surprises are the spice of life.
The weather here has cooled off a bit, so I'll be able to use my oven again without making the house completely unbearable temperature wise.

CAULIFLOWER SALAD
2 heads cauliflower, chopped
1 jar mayo (not necessary to use entire jar, just enough to seal the layers)
1 shaker of parmesan cheese
1 head iceberg lettuce chopped
pepper
In a large bowl, layer lettuce, cauliflower, then mayo. Sprinkle a layer of parmesan cheese and black pepper over the mayo. Repeat layers ending with parmesan pepper layer. Cover with plastic wrap and refrigerate overnight. Toss salad before serving.
