Peach, Plum, Apple Crisp



I researched a lot of recipes and then came up with my own, because as usual, I didn't have exactly what they called for. It made just enough to have about a 1/2 cup serving for four people.  Just right in my opinion as cobbler/crisps are perfect served warm. Here's what worked for me.

2 very ripe peaches
2 very ripe plums
2 small apples
1/4 cup white sugar
1 tsp lemon juice (I probably added a little more)
1 Tbs cornstarch
4-6 Tbs butter
1/4-1/2 cup oatmeal
1/4 cup raisins
1/4-1/2 cup brown sugar

Peel and chop fruits, place in a mixing bowl.  Add sugar, lemon juice, and cornstarch.  Place in a small baking dish that has been sprayed with cooking spray.  In another bowl add remaining ingredients and mush until a crumbly consistency (I used my hands), place over the top of the fruit filling.  Bake at 350 degrees for 20-25 minutes or browned on the top. Serve with whipped cream or ice cream.
