Mexican food....YUM.
Apparently, Boy #1 would rather eat at Moe's...oh well, his loss I say!
The taquito recipe is from here, and a family favorite.
The corn was really simple and flavorful.
SKILLET CORN
1 bag frozen corn
salt to taste
copious amounts of pepper
1 tbs butter
2 tbs half and half
Place corn (still frozen because I'm lazy) in a skillet, with the butter. Allow the corn to defrost over med-med high heat, stirring to distribute the butter. Allow the corn to continue cooking approximately 2-3 minutes stirring frequently to prevent burning. Add half and half, allow to thicken (30 sec--1 min), remove from heat. Season with salt and pepper to taste.
