Don't you just love when the date is like the one above? 8/9/10! That won't happen again for a long time but.....I can always look forward to 9/10/11. Yes, I know, I'm a dork!
On to our meals for the week. I'm planning on making a few new recipes because I'm off for an extra day. I'm also hoping to complete school clothes shopping and a few summer projects around the house. Any good thoughts sent my way will be appreciated as I'm shopping with two very picky teens, Oh My!

LINGUINE WITH CREAMY PESTO SAUCE
8 oz linguine
2 cups tightly packed fresh basil
1/4 cup olive oil
5 tbs pine nuts
3 large garlic cloves
1/2 cup lower sodium chicken broth or use homemade
1/2 cup heavy whipping cream
1/2 cup shredded parmesan cheese, divided
1/4 tsp salt
Cook linguine according to package directions. Drain; return to pot.
Pulse basil, oil, pine nuts and garlic in food processor until pureed. Place in medium saucepan; heat over medium high heat 1 minute. Reduce heat to medium low. Add broth, cook 2-3 minutes or until hot. Add cream; cook 1 minute or until hot. Stir in 1/4 cup cheese and the salt.
Pour sauce over linguine; sprinkle with remaining 1/4 cup cheese.
