The result was wonderful! Served over white rice like the recipe suggests makes for an easy weeknight supper. I didn't even brown the pieces of meat, just tossed them and the rest of the ingredients into the crockpot and allowed it to cook for about 8-10 hours on low. My only suggestion to improve the texture of this recipe involves either draining the tomatoes or decreasing the stock by about 1/2. Another thought to make this even more delectable would be to add some potato flakes to the mixture at the end of the cooking time to make it more of a stew than a soup.
