I was super excited about trying this recipe that a friend of a friend gave to me, and today I decided to make it. It looks just about what I expected and has an interesting, cilantro, fresh flavor. I toasted whole wheat bread first then put a thin layer of the green stuff with a bit of mozzarella on top. I toasted it again then topped with a slice of purple onion and sliced tomato. Pretty good, but you have to enjoy cilantro. You know if you are the type to pick the "green" stuff off of your Mexican entree, this is not the dish for you. However, if you're looking for a different type of lunch....give this a try. It absolutely is open for interpretation and could be served in a variety of ways.
