Our picnics usually involve lots of hand held foods that are easy to transport. Since we are from Florida, when eating outside, we try to have things that won't spoil...so we usually have an assortment of crackers, and cheese that are easily kept cold in the cooler.
My niece calls this recipe sour cucumbers and I'm sure that lots of people make a variation of this....it's wide open for interpretation.
1 seedless cucumber slice really thin
1/2 small white onion sliced thinly
white vinegar
vegetable oil
black pepper--lots and lots
salt
Make a vinegarette with whatever ratio you like. We usually make it with more vinegar than oil because my niece loves the sour. Allow the mixture to marinate for 1-3 hours. It only gets better when it sits longer
