Pesto Lasagna


Sunday Dinner was a delight!  I followed this recipe or maybe better stated, I used it for a guide.  The changes I made probably increased the caloric count, but not by much!  I only added an egg to the ricotta mixture because it seemed dry initially.  Another change I made was to substitute pepper jack cheese instead of the mozzarella.  Oh, and I actually didn't cook the lasagna noodles prior to the assembly because, well....it's a pain in the rear.  Instead, I assemble the lasagna and pour about 1/2 cup chicken stock around the edge.  I know that this step, along with the added egg blew the vegetarian out of the title of this dish but you could use vegetable stock and omit the egg without any problem.  
I think this a definite keeper.  We love the green stuff!
