Cobb Salad Sandwich Review

I made the foccacia bread from here, but of course.....I changed the recipe.  Imagine that!  

Really, the only thing I changed was to not put the onion topping on.  I used basil instead of rosemary because...that's what I had and just put salt and pepper and parmesan cheese on the top before baking.

I then assembled the sandwich without the cheese, after grilling the chicken breasts (and I made enough to use for Monday's meal Yay me!)

I have to say tasty, tasty, tasty.  I also have to say that it makes a LARGE amount.  I would recommend either halving the recipe for a family of four or serving at any type of shindig you might be hosting or attending.
