Chewy Oatmeal Raisin Cookie Recipe/ Monday's Dinner


For our neighborhood "shindig", I  made the cookies that I found here.  Hopefully they live up to Grandma's like they say that they will!


Things You'll Need:

•1 cup butter, softened

•1/2 cup white sugar

•1 cup packed brown sugar

•2 eggs

•2 teaspoons vanilla extract

•1 1/4 cups all-purpose flour

•1/2 teaspoon baking soda

•2 teaspoons ground cinnamon

•3 cups quick cooking oats

•1 teaspoon salt

•1 1/2 cups Raisins

Preheat oven to 325 degrees F (165 degrees C). Use a large bowl, mix butter, brown sugar, and white sugar till fluffy. Beat eggs in a different bowl them mix into the large bowl. Then mix in the vanilla.  Add the flour, baking soda, salt, cinnamon. With a large spoon mix in oats and Raisins until just blended.  Use a greased spoon to scoop up an ample helping of the cookie mix. Place onto greased cookie sheets. Space cookies at least 2 inches apart.  Bake for about 12 minutes. Remove cookie sheet from the oven , Remove cookies from the cookie sheet , let them cool.


This is the finished product with 1/2 cup mini chocolate chips added for 1/2 cup of the raisins.  MISTAKE!  I should have left the recipe alone!  But I forget.....I can not freely, creatively, at will, change a baked product recipe and expect the outcome to be wonderful on the first try.  Amounts and ingredients are important!

They are pretty though!



Monday's dinner was Turkey BLT's on leftover hamburger/kaiser rolls.  As a family, we collectively decided no more beef for the weekend/holiday.  So we had some turkey bacon sorely in need of cooking, leftover pasta salad, and I made green stir fry type veggies.  For a throw together dinner, Yum!  The best part.....cooked and cleaned up by 6pm, everyone was in bed by 9:30. 
Aah, the simple things in life!  I'm easily pleased (at least today)

  1. The cookies were great Tab. I personally love the raisins so I will be sticking to the recipe. Blt looks great to, unfortunately I have to stick with BBQ for the next couple of days. Although I have been able to come up with a BBQ Bacon Vinaigrette that goes great over wilted spinach and BBQ Chicken. 12 hours a day in the same place you have to get a little creative.
