Oven Baked Pork Chops


6  Bone In Pork Chops
1-2 cups Rice Chex crushed
1 cup freshly grated Parmesan cheese
2 tbs fresh chopped cilantro
black pepper to taste
2 eggs

I used the food processor to finely crush/process the Rice Chex, cheese, and cilantro. Add the desired amount of pepper. Place in a pie dish or something similar that is shallow.  Whip the eggs in another dish that is shallow.  Dip the pork chops in the egg, then into the crumb mixture.  Press the crumb mixture into the chop so that it is fully covered.  Place chops on a foil lined baking sheet that has been sprayed with cooking oil.  Bake at 425 for 30 minutes or until juices run clear.
