SUNDAY--Lazy Man's Lasagna**Recipe below. Tried and True, garlic bread, sauteed mushrooms, lima beans.
MONDAY--Crockpot pork chops**Recipe below. It's new, will post review after making, scalloped potatoes, peas.
TUESDAY--Grilled chicken, rice, green lima beans.
WEDNESDAY--Baked potato bar with leftover meats over the top and other yummy stuff.
THURSDAY--Chicken enchiladas with cheese sauce,salad.
FRIDAY--Family dinner at a semi-fast food place.
SATURDAY--Green Curry chicken with coconut milk, rice.
BAKED PORK CHOPS (REVISED FOR CROCKPOT BY ME)

1/2 cup all purpose flour
1 1/2 tsp garlic powder
1 1/2 mustard
1 1/2 tsp paprika
1/2 tsp celery salt
1/4 tsp ground ginger (i will omit don't have any)
1/8 tsp dried oregano
1/8 tsp dried basil
1/8 tsp salt
pinch of pepper
4 pork loin chops (around 3/4 inch thick)
1-2 tbs canola oil
1 cup ketchup
1 cup water
1/4 cup packed brown sugar
In a shallow dish, combine the first 10 ingredients; dredge pork chops on both sides. In a skillet, brown chops in oil on both sides. Place in a greased 13 X 9 baking dish. Combine ketchup, water, and brown sugar; pour over chops. Bake uncovered at 350 for 1 hour or until tender. I plan to put them in my crockpot, frozen without browning. I will allow them to cook for approximately 7-8 hours on low.
LAZY MAN'S LASAGNA--BASIC RECIPE
1/2 package egg noodles
1 lb ground beef
1 8oz can tomato sauce
4 oz cream cheese cubed
1 cup shredded cheese
1/8 tsp garlic powder
1 6oz can evaporated milk
In a skillet brown ground beef then drain excess fat. Add 8 oz tomato sauce and desired seasonings eg: salt, pepper, basil, oregano. Allow sauce to simmer until flavors are combined, approximately 6-8 minutes. In the meantime, cook egg noodles (we prefer extra wide) for the time indicated for al dente doneness. Drain and add the cubed cream cheese, evaporated milk, garlic powder, and salt. Place the noodle mixture in a baking dish. I sometimes use an 8 x 8 square or you can use a 9 x 11, just remember to keep an eye on the oven depending on the depth of your dish. Over the noodle mixture, put the ground beef and tomato sauce. Top with shredded cheese--mozzarella is the original recipe but we prefer a mixture with cheddar. You can use any type of easy melting cheese that your family likes. Allow this to bake at 350 until cheese and meat mixture is bubbling and browned on the top.
IMPORTANT NOTE: This recipe is open for interpretation, you can add more tomato sauce if you like it "saucy", you can add less spices, etc., etc. Works great for a make ahead meal.
