Happy Menu Plan Monday.....I really have absolutely no idea what I am going to cook this week My husband starts working an afternoon shift, so I'll be cooking for myself and the kids with planned leftovers going into his lunch/dinner for the next day. The one really big bummer about the whole thing is that I now get (operative word with positive connotation) to cook and then clean up the kitchen after. Oh yeah, my boy #1 and boy#2 are gonna have some dishpan hands, hopefully.
- SUNDAY--Roast Pork, corn on the cob, rice, homemade applesauce
- MONDAY--Pasta Primavera Alfredo at Kraft foods, green salad with sliced tomatoes.
- TUESDAY--Spaghetti with homemade meatballs, garlic bread
- WEDNESDAY--Lentil tacos, green veggies
- THURSDAY--Crockpot sticky chicken, noodles, lima beans
- FRIDAY--Homemade Pizza
- SATURDAY--Who knows???
Well, I'm hoping that my week runs somewhat smoothly since I do have a sort of game plan (just since I started typing). My day off this week is Tuesday so I will be able to do a bit of "pre cooking" so after work won't be too crazy. What is crockpot sticky chicken? I might get the kids to by into that. Lentil tacos however will never fly in the merton house.
ReplyDeleteI just use chicken thighs that are skinless but still have the bone. Put vegetables like carrots and onions on bottom to act as a prop to keep the chicken from cooking in own juice. Season thighs with salt, pepper, garlic powder. Then coat the chicken with brown sugar on one side, about 3/4 cup for 8 big thighs. I cooked on low for about 7 hours. Lots and lots of recipes on internet for "sticky chicken", I think I combined a few of them. It's got sugar in it...I think I used that line on Ty.
