Porcupine Meatballs





This recipe was as good as we remembered! I had frozen the meatballs with the rice uncooked and even forgot to take them out of the freezer on the day we were going to have them for dinner. Just popped them in the microwave then browned, poured sauce over, then simmered, covered for about 30 minutes. As you can see in the last picture the rice expands.
