This has been a carryover for a couple of weeks, not because it is not one of our favorites, but because on a kid planned and prepared meal, all of my precooked chicken was used up. This will reappear on my 10/11/09 menu.
Peanutty Chicken Pasta
1 tbs vegetable oil
1 cup chicken broth
2 tbs honey
1 tbs soy sauce
1/4 cup peanut butter
1 tbs cornstarch
1 tsp ground ginger (I omitted)
2 green onions
2 cloves garlic
1 green or red pepper
spaghetti noodles (we used whole wheat)
Cook chicken in oil (or use precooked chicken). Add garlic and chopped green or red pepper cook until desired tenderness. If using precooked chicken, saute the pepper and garlic first, then add cooked chicken. In a bowl whisk together chicken broth, honey, soy sauce, peanut butter, cornstarch, and if desired ginger. Add sauce to the pan and cook until thickened. Sprinkle green onions over and serve with whole wheat spaghetti noodles.
