This week we are making some oldies but goodies and a lot of the prep has already been completed. Yeah for me!
SUNDAY--Chicken and Dumplings, Peas.

TUESDAY--Italian White Beans with Chicken, with cornbread. Recipe at http://www.eatbetteramerica.com/Recipes/RecipePrint.aspx?id=35845&revs= I am going to revise it a bit..i am an equal opportunity tweaker.
WEDNESDAY--Crockpot Beef Tips with noodles,green veggies,crescent rolls Recipe below. LEFTOVERS!!! We'll have this another night.
THURSDAY--Homemade Pesto Pizza with salad.
FRIDAY--Porcupine Meatballs, mashed potatoes, fresh veggies. Recipe below.
SATURDAY--Leftovers or whatever is left in the freezer.
CROCKPOT BEEF TIPS
1 3-4 lb chuck roast (cut in cubes)
1/2 chopped onion
1-2 cans cream of whatever soup. I use cream of asparagus and chicken
Very simple, throw everything into a 4 quart crockpot. Season to taste. Set on low cook for 8 hrs or on high for 4-5.
PORCUPINE MEATBALLS
Meatballs:
1-1 1/2 lbs ground beef
salt and pepper to taste
garlic powder
1 egg
panko bread crumbs/seasoned bread crumbs
2 tbs milk
worcestshire sauce
1/4 cup uncooked white rice
Sauce:
2 small cans tomato sauce
1-2 tbs worcestshire sauce
1/4 cup brown sugar
Mix the ingredients for the meatballs, adjusting bread crumbs so that the mixture holds together. Roll the meatballs to the desired size. Mix together ingredients for the sauce in a separate bowl. Brown the meatballs in a large skillet using oil if needed. Drain any excess fat. Pour the sauce over meatballs and bring just to a boil. Reduce heat to low and simmer for approximately 30 minutes or until meat is cooked through and rice has expanded.
Meatball mix can be your favorite recipe with rice added. Ingredient amounts can be adjusted to taste. The sauce ingredients can also be adjusted to your taste.
