It's only Wednesday, and since my menu is so boring, I had to change it up a bit. Tonight we had Italian sausage boiled, then browned with onions and covered with Paul Newman's cabernet sauce. I served it with sliced browned potatoes (my husband made pasta and ate it over that because well, he's a really big pasta fan and disappointed that we didn't have spaghetti). Tomorrow I am going to try a mixed up crazy crockpot pork recipe because I really just want dinner done when I get home. I'll post the recipe if it turns out to be good.
RECIPE REVIEW
The creamy chicken pasta was good according to the family. I prepared it the way that I thought the recipe meant. I used a frying pan with nonstick coating to boil the pasta with the milk and it does thicken up to a sort of sauce just about the time that the pasta is tender. I only simmered the pasta as opposed to a full boil so that the sauce wouldn't curdle. I also stirred the mixture frequently and stood by the stove during the cooking process. After the sauce thickened and before adding the chicken, I added 3oz cream cheese and stirred that into the sauce. I also added some leftover broccoli. Immediately after stirring in the chicken, (previously cooked) I added approximately 3/4 cup freshly grated parmesan cheese. I guess it was good...I ate it. I can't decide if I liked or will ever make it again. Maybe it was the whole wheat pasta, I dunno?!?
