Menu Plan Monday-Mother's Day Edition 5/10/10


Happy Mother's Day Edition

This week we are still focusing on quick and easy but healthy or better said healthier.  I have found a new lunch favorite that is based on our easy peasy Monday dinner last week.  I use whatever flavor wrap shell I have on hand with sliced chicken lunchmeat and a small amount of shredded cheddar.  My only change to our dinner recipe is to add one half of an avocado sliced and a honey mustard sauce instead of the Caeser dressing.  Yummy!

Deli Sandwiches
Broccoli Salad (Recipe Below)

TUESDAY
My Normal Day Off but...have to take a class
Cheese Stuffed Meatloaf
Mashed Potatoes
Steamed Broccoli
(All items will be made ahead and ready for kids to put in oven)

WEDNESDAY
Chicken and Yellow Rice
Sauteed Okra

THURSDAY
Large Green Salad (deli/cobb like)
Garlic Bread

FRIDAY
Grilled Pork Chops
Noodles with Parmesan
Green Veggie



BROCCOLI SALAD

1-2 heads broccoli crowns chopped
5 slices bacon cooked until crisp and crumbled-I used turkey bacon
1/4 cup chopped red onion
1/2 cup shredded sharp cheddar cheese
1/4 cup sliced almonds
1/4 cup golden raisins
1 cup mayonnaise
1/4 cup sugar
1 tbs white vinegar

Combine first 6 ingredients in a large bowl.  In a separate bowl mix the mayo, sugar and vinegar until well combined.  Pour dressing over the broccoli mixture.  Allow to chill in the refrigerator for at least 2 hours.  Stir to evenly distribute dressing before serving.
