This cake I purchased from Aldi is still number one on my list of non homemade sweets. Lucky for me the time of year rolled around and my store had plenty of stock. Actually, this cake is not overly sweet which might just be the reason that I am in love with all of its cakey goodness. The whipped cream layer is <b>not </b>fake, the cherry layer has whole fruit that is more tart than sweet, the cake is a perfect moist sponge, and the chocolate coating...well its chocolate. In my mind, this delightful combination is the perfect dessert that isn't either too rich nor too sweet. </div>

We ate well last week, combining some old favorites with one standout recipe that will repeat for sure be on our menu many times in the future. Obviously, this photo isn't from the meal we ate, but I did use the same type of cheese. White American is perfect for stuffing burgers. It is melty and stays inside of the burgers where it belongs. Allowing the burgers to rest for the obligatory 5-10 minutes is almost torture. I didn't get a picture of the haluski...probably wouldn't have been too appetizing anyway but the taste was great.</div>

Using up the leftover ham became pretty important on Monday, and rather than make the bean soup that I had planned, I made an old standby, barbequed ham. I don't think I have ever shared my so called recipe for this but it really couldn't be easier. Add 2-3 cups of cubed leftover ham to a skillet and pour 3/4 cup of your favorite sauce over the ham. Add a few shakes of Worcestershire sauce, stir to combine. Heat over medium until the ham is hot and bubbly. Occasionally we use leftover hamburger buns to make a sandwich, but usually we add a starch and vegetable and call it dinner.</div>

I made ham stock with the remaining bits of ham and the bone. I put them in the crock pot and just covered the bone with water and simmered the broth for 24 hours. I then strained and cooled the stock and stored in the refrigerator until the next day. When I was ready to use the stock, I removed the fat and again put the liquid in the crock pot. Instead of bean soup, I made split pea soup. It was tasty and worked perfectly as the weather cooled down for probably the last time until the Fall.</div>

I used all of the ham for the two recipes above, nixing the idea of <a href="http://www.myrecipes.com/recipe/bucatini-ham-asparagus">Bucatini, Ham, and Asparagus.</a> I'll put this on my plan for next time I bake a ham. Last week when I was chopping vegetables and trying my best to be organized, my son made <a href="https://lifeasmom.com/chicken-in-marinades/">this</a> Southwest marinade. He simply took some chicken that was in the freezer placed the parts and the marinade in a new freezer bag. On Tuesday night, I put the bag in the refrigerator for a slow defrost. We had grilled chicken, roasted green beans, and rice for dinner on Wednesday. I cooked extra chicken and used it for my version of <a href="https://www.foodnetwork.com/recipes/ree-drummond/cajun-chicken-pasta-recipe-2109871">this</a> recipe this past weekend. </div>

We had leftovers one night, and Friday I had two over medium eggs on top of matzo. I have just discovered the crispy matzo bread that will now remain part of my life forever. I was listening to a podcast and heard the show's host talking about matzo bread topped with butter. I tried it and now I'm hooked. Big fan, big fan!</div>

I have no plans past Thursday because Friday I am leaving on a well anticipated trip to Ireland. My adult son will be home and can fend for himself. There will be leftovers and a full freezer and frig available to him, however the chances of <a href="https://www.zaxbys.com/">Zaxby's</a>, McDonalds, or other take out meal are pretty high. He really is a great cook and a much better baker than I am. However, he has inherited his Mom's dislike of dishes and tends to avoid making any at all costs. </div>

If you like a sweet tart orange that has no seeds and is a cinch to peel, try the Minneola variety. They are my absolute favorite and I buy them <i>every </i>year when they are in season. The season has pretty much passed now and I feel like I am in a holding pattern as far as fruit and vegetables are concerned and I need a new fruit to eat for breakfast. It has still been too cool here to see an abundance of choices at the Farmer's Market so I have been eating plain scrambled eggs. I don't particularly like breakfast foods in the morning and I usually stick with some sort of fruit for a mid morning snack followed by an early lunch. Fingers crossed the spring bounty hits the market soon!</div>

I forgot to finish my meal plan post last week and what we ate...well, it wasn't terribly appetizing. The only exception was the ham I baked on my day off. I'm in crunch time now to finish up the last class in this semester and cooking isn't on the top of my priority list. To give you an idea of my workload, I finished and submitted an outline for my presentation today and studied for what feels like 100 hours. This week I have a forty five minute meeting with my adviser on Thursday, at some point I am going to film myself and submit a presentation, and finally take an objective assessment wherever I can fit it in all while working every day but Thursday. Oh yeah, I have a medical appointment on Thursday also, thank heavens I have an early time. I am already exhausted just thinking about my jam packed schedule but I know I will be so so so relieved when I finish everything. Then I can start getting my stuff ready for my trip to Ireland! I was invited by friends and the stars aligned making it possible for me to go. Have passport will travel is my current motto. The downside of all this crazy "busy"ness is that I have been starving every day! Considering that I ate matzo with butter one night and called it dinner could possibly be the reason why ๐</div>

We had a fun family get together today that combined great food, the Easter holiday, and my Dad's birthday celebration. I made a spiral ham from Aldi (they are tasty and only 95 cents per pound right now). My brother in law made roasted pork shoulder with Mojo marinade and my Mom made a plethora of side dishes. Speckled butter beans, broccoli casserole, macaroni and cheese, rolls, conch peas, red gelatin salad, and mashed potatoes rounded out the midday meal we shared. After all of this food, dessert was almost an afterthought but I didn't say no to a dish of the Chocolate Trifle with Heath Bars to bring home for later. ๐</div>

One of the things that I am most grateful for in my life is the fact that my immediate family lives close enough to get together for important family celebrations. My Dad is turning 78 years young today and continues to live his life doing exactly what he loves every day. I love you, Dad!</div>

The menu for <a href="https://tabbytreats.blogspot.com/2018/03/rhubarb-strawberry-pudding-cake-try.html">last week</a> worked out pretty well considering we didn't have all of the ingredients to easily whip up dishes. This week will follow the same easy pattern I have established <a href="https://tabbytreats.blogspot.com/2018/03/rhubarb-strawberry-pudding-cake-try.html">here</a>, and <a href="https://tabbytreats.blogspot.com/2018/03/menu-plan-monday-31218.html">here</a>. It is officially Spring even though here in the deep south we have had nighttime lows in the 30's ๐. For the most part though, the weather has been quite enjoyable, cool at night and in the 70's during the day. On another note, I am really off of my picture game, but I am hoping to get some great photos of our meals this week as the days get longer and longer and the light is better. <br />
Our star recipe of the week went to <a href="https://tabbytreats.blogspot.com/2016/08/menu-plan-monday-82916.html">Korean Beef/Chicken Bowl</a>. I make this recipe often because it it so simple and delicious, especially if you cook your protein and freeze in one pound packs. Just remember to put the package in the frig the night before and by the time you are ready to cook the meat is defrosted and perfect to mix in the remaining ingredients. This meal can literally be on the table in as little as 15 minutes with a super small amount of prep. Look for the frozen "sticky rice" from Aldi and completely simplify your weeknight meal. I'm sure this is a seasonal thing so be sure to stock up! Serve with a roasted vegetable and voila, dinner is done.</div>

As a child, we never had rhubarb anything and I am delighted that I have now discovered the sweet while kind of tangy vegetable. I still have some rhubarb left so this cake might be on repeat this week or I might just cook down the remaining stalks and leftover strawberries to make a freezer jam to have for a later date.</div>

We didn't have the <a href="https://www.foodnetwork.com/recipes/sunny-anderson/sunnys-easy-blt-hot-dog-3772120">hot dogs</a>, the <a href="https://tabbytreats.blogspot.com/2011/06/italian-sausage-with-green-peppers.html">sausage and peppers</a>, nor the <a href="https://tabbytreats.blogspot.com/2010/03/menu-plan-monday-32210.html">yummy taco salad</a> which would seem suspiciously like a fail but we did eat at home so I'll count that as a win. Ty and I enjoyed an easy dinner of <a href="https://www.lynnskitchenadventures.com/2018/02/eggs-rice.html">Eggs and Soy Sauce over Rice</a> made even easier by the frozen sticky rice I got at Aldi. Frozen rice has recently become a favorite convenience food for us. Not only because its delicious and economical but it is SO quick to make after a long work day.</div>

I also made a chicken mushroom ravioli one pan dish based on <a href="http://www.publix.com/aprons-recipes/sausage-and-cheese-ravioli-saute-with-six-layer-salad">this</a> recipe along with roasted green beans. I highly recommend the original recipe especially in the Fall and Winter months but this rendition was satisfying too. Grilled chicken thighs, baked potatoes, and roasted asparagus which I didn't take a picture of was our Wednesday dinner rather than the sausage and peppers I had planned. We also had a great <a href="https://tabbytreats.blogspot.com/2016/10/waffle-makers-rock.html">Grilled Cheese</a> with salami and chopped chicken to round out our week. There weren't any superstar meals but all of them were quick, simple, and tasty. My cupboard and freezer are more empty than usual and my menu for this week will reflect the lack of ingredients available. There is plenty left for us to eat well until next Friday though since grocery shopping is not on my agenda for this week. I will be busier than busy in my free time working on my Communications class if I want to stay on my educational tract before time runs out in this semester.</div>

Boba Tea</div>

I never had any desire to have a Boba Tea since normally my only beverages are water with lots and lots of ice along with two packets of <a href="https://www.truelemon.com/">True Lemon</a>, and coffee without sugar. I slip in the rare Coke and the occasional beer but truly my tastes lean towards the sour side. However, I am now going to include Taro Boba Tea in the category of "my favorite beverages". Keep in mind that this drink is over the top sugary and I only drank half. I know what kept me sipping this beverage were the rice balls that sink to the bottom. Even though I only drank half of the liquid, I ate <b>all </b>of the Boba ๐<br />
<br />
The time changed today and for the first time ever, I attempted to acclimate myself to the loss of one hour of sleep proactively. Yesterday, I took three required certification courses lasting from 9am to 5:30pm. At 5:30pm, I was mentally drained and all I wanted to do was eat dinner, watch a little television, and go to bed early. When I arrived home at around 6:30pm, I set all of my clocks forward and intentionally went to bed at 10pm...new time. Just early enough that I would wake up about the same time as normal old time. I was able to get all of my Sunday chores out of the way already which in my mind is a win!<br />
<br />
On to <a href="https://tabbytreats.blogspot.com/2018/03/menu-plan-monday-3518.html">last week's menu.</a>...I made a <a href="https://www.foodnetwork.com/recipes/katie-lee/spicy-thai-red-curry-chicken-casserole-4714745">chicken, broccoli, and rice casserole </a>that immediately went in the garbage after a tiny bite. The ingredients seemed great, but I substituted the curry paste for a red chili paste I already had in the cabinet. The red chili paste had such a strong fish sauce presence that I couldn't stomach it. I had to diffuse lemon oil to get rid of the odor in my house...yes, it was that strong. This dish was my most epic fail in recent history. Strangely enough considering the pervasive fish smell, we had Parmesan Tilapia in the freezer that we cooked in the air fryer. Maybe not the best choice considering the lingering odor, but it worked. I think the original recipe would have been delicious had I not taken creative license with the ingredients. The <a href="http://sweetasacookie.com/best-cast-iron-pizza/">cast iron pizza</a> was yummy as always and came together without a hitch, thank goodness. We needed a win after that Sunday night fail. Our favorite meal this past week was the <a href="https://pinchofyum.com/crockpot-chicken-wild-rice-soup">Chicken Wild Rice Soup</a>. Considering that I didn't cook this one in the crockpot, use true wild rice, or add wine to the mix, this was stupendous and perfect for a chilly night. I did use the proportions for the liquids which worked out perfectly. I plan to write my exact recipe here soon before I forget exactly what I did...because I foresee many chilly nights with a bowl of this comforting soup and some sort of crispy crunchy bread.<br />
<br />
My son and I haven't been able to come to an agreement for the menu this week, so I'm going to write down some loose ideas for ingredients that are in my freezer, frig, and cabinet. I have chopped purple onion, green onion, peppers, cleaned asparagus, and green beans so at least we have vegetable options ready to go. I find that if I do that on the weekend, our intake of the good for you stuff is significantly higher. <br />

Last week's menu was planned with ease in mind, but I didn't follow it very carefully. There were a <b><i>lot</i></b> of leftovers from the <a href="http://www.kevinandamanda.com/chicken-fajita-pasta/comment-page-2/">Chicken Fajita Pasta</a>. Typically, this dish would be something that my son would enjoy, but this time he didn't care too much for the flavors. Me, on the other hand thought it was fantastic. Guess what I ate it for at least two dinners and one lunch during this past week? We also ate the chicken salad I had planned but the <a href="http://sweetasacookie.com/best-cast-iron-pizza/">Cast Iron Pizza</a>, and the <a href="https://tabbytreats.blogspot.com/search?q=taco+salad">Taco Salad</a> fell by the wayside. Also instead of steak, I used the hamburger that should have gone in to the taco salad to make grilled patties that we ate with roasted asparagus and cauliflower mashed potatoes. Instead of the homemade pizza we ate a frozen doctored up one. I wish I had taken the time to make the dough</div>

Even though I always loved Day Light Savings Time when my children were small, I'm not as big of a fan as I used to be. Taking pictures that have appropriate lighting is virtually impossible. Needless to say photos of our dinners have been non existent. The time changes again on March 11 so I'll be able to capture all of my creations and give myself visual inspiration. In other news, I have passed Statistics for the second time and I am ecstatic that I can put that behind me. I'm learning that education on line presents a whole set of challenges that so far I'm not jiving with. I really appreciate a classroom setting with the traditional professor up front to facilitate my learning process. Luckily, I don't have that much longer to complete my degree. If I choose to further my education, my choice of programs will take in to account my learning preferences and not just personal convenience. I also have lots going on around my home. I am in the thick of an updating process and have replaced fans, fixtures, sinks, front door etc, etc. I have been crazy busy trying to juggle house stuff, go to work, and study for school. Luckily work has been quieter than usual and I've been able to maintain some semblance of sanity...and clean clothes ๐</div>

The next few weeks, I get to be in charge of my schedule as the physician that I am employed is on unexpected medical leave. I am the queen of keeping at least one extra job to offer options if the need arises. Thankfully, I would still be compensated regardless of the physician presence in the office...although, of course, I would need to show up every day. I'm the sort of equal opportunity employee type that always keeps another reliable position on the back burner and I have decided to make full use of this golden opportunity. For the next three weeks, I will reverse my schedule, working my usual job only on Fridays and work at my back burner one the remainder of the week. This keeps boredom at bay and allows me to flex my clinical skills. Tuesdays, Wednesdays, and Thursdays<span style="font-size: x-small;"> (the days that I am working at my second</span> <span style="font-size: x-small;">job)</span> will be a challenge to get dinner on the table! I can't promise that fatigue combined with laziness won't land me in the Chik-Fil-A drive through at the end of the week though. ๐</div>

While I'm still not 100%, I am feeling better and even had a bit of hunger in the late part of last week. Not much true cooking happened but we managed to stay out of the fast food restaurants. Monday through Wednesday I stuck to simple carbs and didn't include any dairy to keep my stomach settled. If you prep a few things on the weekend, you could potentially have it on the table and be cleaning up the kitchen in thirty minutes. That alone makes it a winner in my book.<br />

Valentine's Day over the course of the years has morphed into a family holiday. I typically cook a special dinner that we love....not necessarily fancy, just one that tastes delicious. When the boys were small, we didn't typically have dessert every evening (although now I do since life is too short) so the Valentine's Day dinner included some sort of sweet. The boys always looked forward to the dinner and we now have a new family tradition that still stands today.<br />

Happy {after the fact} New Year. Obviously, I haven't gotten off to a very good start with meal planning or anything else for that matter. I came down with the dreaded flu on Christmas Eve and honestly just this week have I begun to feel like eating or participating in anything fun. Not only was I coughing, sneezing, etc., etc. but I was nauseous and had difficulty keeping even liquids down. As a matter of fact I lost about ten pounds and my physician was so concerned that I had to have some additional testing to verify that I am truly on the mend. Thank heavens I am on the road to recovery and now I can start my year off right. I'm just going to pretend that this is the first week of the year and forget about the last three weeks. Nope, I will not let the recent past define the tone for 2018. </div>

I haven't shopped for food for about four weeks now and my freezers are looking pretty bare. We have used up all of the meat that I had stashed and eaten more than our fair share of restaurant and fast food items. In a way,we have been on a pantry challenge and we didn't even know it, lol. Ty received an Air Fryer for his birthday so I know that a lot of experimentation is going to be happening over the next few months. To me, it is basically a convection oven (which I adore) that is portable. The possibilities are endless with what we will be making.</div>

I used crescent rolls as my dough since pizza dough wasn't an option in my frig. It was super tasty although my sodium limit for the day was more than likely met at least twice.<br />

I recently had an autoimmune flare that necessitated<i> lots</i> of medications including double doses of steroids to treat the inflammation that was causing not only pain but compromised perfusion in my extremities. Of course, as a result, I am puffy and feeling a little chunky. From past experience, I know that the puffiness/chunkiness will resolve as the medications work their way out of my system, but for now meals including lunches will be structured. This doesn't mean I am restricting any specific foods (see chili dogs above) because I refuse to ever diet again, however I am reducing portion sizes and sticking closely with the plan. Snacking is out for now. To be honest, being "good" probably doesn't help that much but it makes me feel like I'm in control of my illness instead of the other way around.</div>

I used one can of black beans, and one can of refried black beans to avoid using the immersion blender. This frozen delight is part of Aldi's Oktoberfest inventory that I look forward to each year. My only recommendation is to be open with the cooking time. Watch carefully when baking as I found this pastry takes about 10 extra minutes in the oven to reach the golden brown color. A tip I have to share is use parchment paper to cover the cooking sheet. The bottom of whatever you are baking gets crisp and no washing required.</span></i></div>

Of course, it was dark and we were really hungry and I didn't get a passable photo of the results. The Famous Dave's seasoning was exchanged for Montreal Steak seasoning and I used Tastefully Simple's Garlic Garlic for the Garlic Pepper seasoning with fantastic results. I used leftover chilled rice, and pre cooked ground beef to make this meal come together in about 5 minutes. At the end of the cooking process, I stirred in about 1 tbs A-1 sauce that took this recipe from good to great! We will be having this weekly until I either have a change in my course schedule or until we get tired of eating it. Again, I didn't make a green vegetable because I didn't prep any over the weekend. That's my number one goal in the upcoming weeks. Prep the veggies, prep the veggies....no excuses.</span></div>

I <i style="font-weight: bold;">have </i>to get back on track with cooking dinner each evening. Well, actually for two days each week I need to have homemade freezer or crock pot meals ready to go. I have forgotten what school (even one class) does to my desire to plan and cook. I'm only hesitant to do slow cooker meals because all of the recipes I have are just too much with too many leftovers. Neither myself nor Ty seem to have a huge appetite these days but then again, I haven't made anything that we find super exciting. A fairly boring menu for this week, but two of the days have items that can be cooked for a long period of time in the crock pot or on top of the stove. My class with required attendance is on Wednesday and Thursday and starts about an hour after I get home after work. If I don't eat before class, it's too late after....going to bed with a full belly makes me feel like a sloth. The last two weeks have been a mad rush and ended with dinner options that were neither healthy or tasty. This plan will alleviate my option to run through the drive through on the way home. I also won't be eating french fries while on live webcam, a fact that will surely please my classmates.</div>

Aah, a flashback from days gone by. We always carved pumpkins at this time of year when the boys were small. It's one of those activities that were lost as my boys <span style="font-size: x-small;">{well, they aren't boys anymore}</span> grew up. </div>

Lots of new stuff happening in our household this week. I made the decision in September to go back to school and honestly, the admission process went so smoothly that I believe it must have been meant to be. I started doing homework this past weekend and my first class is Wednesday evening. All on line. On line classes are something that I am not familiar with and never thought I would participate in.. but I am doing it despite my inexperience. Thank goodness Ty hasn't left for college yet. I get the benefit from a computer whiz right in my own home. I can work a program like nobody's business but I struggle with troubleshooting any problems I encounter.</div>

Another thing I'm focusing on this week is to cut out any and all simple sugar desserts. To satisfy my sweet tooth I'll be eating baked apples with maple syrup or honey and plain yogurt. Ty is certainly a bad influence in that area.</div>

This past week, in a moment of weakness and unwillingness to do any dishes, we <i>almost </i>called for pizza and salad. When neither of us wanted to drive to pick it up we did the prudent...um...lazy thing and searched our frig, freezer, and pantry. Luckily, the weather was tolerable outside so turning on the oven wasn't a big deal which broadened our options. I love when I plan ahead and have some convenience items on hand which isn't always the case. This past year we have decreased the amount of frozen easy foods in our home, opting instead for homemade convenience foods. Unfortunately, the homemade version requires some time spent in the kitchen preparing. While I normally don't mind doing these tasks and actually feel quite accomplished when I do, I have had a bit of a flare with my hands. This "flare", as I call it, involves over the top finger pain with lesions that take quite a while to heal. Thankfully my son is handy in the kitchen and doesn't mind (mostly) helping me out during these times. Honestly, I think that night's meal was my favorite!</div>

Yes, I know don't shoot me. I never, never eat ketchup on anything <span style="font-size: x-small;">(not even fries)</span> but I just so happen to love it on steak. Ty made a <a href="https://www.epicurious.com/recipes/food/views/grilled-beef-skirt-steak-with-onion-marinade">marinade with onions</a> that made this sirloin so tender. It seemed like the onion juice cooked the steak during the marinade process though and it ended up a little over done but still tender. I'll definitely make this again keeping in mind the shorter cook time. I'm saving this other <a href="https://debbiesmidwesternkitchen.com/2014/01/03/copycat-northwestern-steakhouse-dinner/">steak</a> recipe for when it's cold outside.</div>

I included my grown up boy in the decision making for meals, albeit a little arm twisting went in to the occasion. Helping me to plan seemed to make him way more invested in dinner than usual. I am blessed that he likes to cook so getting a little help in the kitchen isn't all that difficult thankfully. Guess what I did for this week too? Yep, he helped with the planning. So....the non plan menu plan worked out pretty well, but writing a real plan is where it's at. I'm even going to write myself a "to do" each day to make things runs smoother which will include sides prep so vegetables and salad will become our routine again. The weather here hasn't cooled off much but all the posts I've seen around the web have me craving fall type food. Rain is in the forecast for the first half of the week so I can use the oven, turn the thermostat down, and pretend.</div>

The service fee will probably save me quite a bit considering the impulse buys I tend to make when I am physically in the store. This week I have consciously decided to not make a meal plan. You're probably thinking, uh, that's a recipe for disaster. Occasionally, I have to learn the hard way that writing down my menu options is truly the best way to get dinner on the table after work. Yeh, I already know I'm headed towards failure...but you see I'm a little hard headed and I'm trying the "no plan" thing again no matter what anybody says. My house thermostat sits at a solid 79 degrees during the day so this dough had plenty of opportunity {about 6 hours} to rise and be really happy in its warm "under the plastic" environment. Patting the dough in to the cast iron pan was simple enough and the dinner plates we use daily fit perfectly as a cover. The picture below is prior to going in the oven, but notice there isn't any visible dough around the edges. It is hard to tell, even in the picture above, but the crust just develops on its own while in the oven {mine goes to 550 degrees F} and becomes so crispy and delicious. Next time I will let the dough develop more and add more sauce and toppings. I only used seasoned hamburger and mozzarella but the pizza possibilities are endless. What I really need is another skillet so that I can make two at a time!<br />
